Ingredients
  

Chicken Wings
  • 2 pounds chicken wings drumettes and flats
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon black pepper
Buffalo Sauce
  • ½ cup hot sauce Frank’s RedHot recommended
  • 4 tablespoons unsalted butter
  • ½ teaspoon garlic powder
  • 1 teaspoon honey optional
For Serving
  • celery sticks
  • carrot sticks
  • blue cheese dressing or ranch dressing

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with foil. Place a wire rack on top.
  2. Pat the chicken wings completely dry with paper towels.
  3. In a bowl, mix baking powder, salt, garlic powder, paprika, cayenne, and black pepper.
  4. Toss wings in the seasoning mixture until evenly coated.
  5. Arrange wings on the wire rack in a single layer without touching.
  6. Bake for 20 minutes, then flip the wings and bake another 20 minutes until golden and crispy.
  7. While the wings bake, melt butter and mix with hot sauce, garlic powder, and honey to make the buffalo sauce.
  8. Toss hot wings with the sauce until fully coated.
  9. Serve immediately with celery sticks, carrot sticks, and blue cheese dressing.

Notes

  • For extra crispy skin, refrigerate the coated wings 30 minutes before baking.
  • Always bake wings on a wire rack to allow airflow.
  • Internal chicken temperature should reach 165°F (74°C).
  • Adjust cayenne or hot sauce for a milder or spicier flavor.
  • Leftover wings can be reheated in the oven at 375°F for 10 minutes to restore crispiness.
